This is a moist delicious easy meatloaf perfect for a weeknight. Perfect when you want comfort food with a lighter twist.
Preheat over to 350 degrees. Line sheet pan with aluminum foil for a quick clean-up.
In a medium-sized bowl mix together :
1lb ground turkey
1 small onion diced fine
1 small carrot grated
1 small granny smith apple (yes, really) grated
1 egg
1/4 cup bread crumbs
1/4 cup parmesan cheese
1 tbsp milk
1 tsp Italian spices
salt and pepper
Ketchup to top or other options: a little apricot jam or just leave it plain.
Instead of the traditional loaf pan, I shape it into a log and cook it on a sheet pan. It cooks faster, no scrubbing a loaf pan, and it still slices nicely. Pretty cool culinary school tip. Yes ?
**Tip**
Ever get frustrated that you spend the time to make a meatloaf and it really needed more salt or spices? I like to take a small meatball-sized sample and fry it up in a pan until thoroughly cooked. I can then taste it safely and adjust the seasonings if necessary.
I like just a classic shmear of ketchup on top of the meatloaf before you put it in the oven.
Cook in the oven for 35-45 min or until internal temperature reaches 165 degrees. It is important to cook it thoroughly.
Delicious served with mashed potatoes and vegetables.
Leftovers make great meatloaf sandwiches or if you want to get really crazy, use it as a protein on a salad!
