A Wandering Chef

A Banana Bread recipe you need to try!

Here is a very easy, simple, and tasty banana bread recipe that has served me well for over ten years catering at Sunrise Kitchen’s Catering. It also is very flexible. You can add nuts, chocolate chips, more or fewer bananas as well.

Jamie’s Banana Bread

 Preheat oven to 350 degrees.

Melt your margarine or butter in a microwavable cup or on the stove.

( I always like to multitask it saves time.)

While it’s melting mash your bananas and sugar. When blended add your melted margarine. Once it come together it is cool enough to add your eggs.

Mix Well.

In a separate bowl add your flour and baking soda and salt, stir until combined. Make sure your baking soda is mixed in well.

Slowly add dry ingredients to wet ingredients. Stir until combined.

And you are done !

Pour into a greased loaf pan

Bake for 40-55min or until internal temp reads 220 degrees.

or

9x 13 casserole dish

Bake for 30-40 min or until internal temp reads 220 degrees

(A fun tip I LOVE LOVE LOVE my slipmat. I will use them in lieu of greasing the pan, make it easy to pop out of the pan) Just use a spatula to go around the edges then turn the pan over and pop it out.

Looking for a hand mixer? This one has been my tried and true tool. With a side baking business, this bad boy has gotten a lot of use. In the last 13 years, I’ve only owned two. I would definitely recommend this brand. It is a budget friend’s workhorse.

Questions?

Can I use butter?

YES...it can be substituted, This recipe has been with me for a long time. I chose margarine mainly because I developed this recipe when I was young and broke. and butter costs more. To honor the recipe I still use margarine, a bonus is it also makes this a good vegetarian recipe.

Believe it or now my bananas are yellow not ripe enough for bread I have company coming what can I do?

Fun tip…it is possible to soften and SWEETEN bananas by popping them in the oven. Put the whole unpeeled banana on a sheet pan and put them in the oven at 350 for about 15 min. They will bake a little, the peels with turn black. They will also get a little juicy and soft. You can just chop off one end and the lovely fruit will slip out into your bowl ready for action!
