This recipe works best with white quinoa. It holds together better than other varieties. Start with quinoa cooked on the stovetop
Ingredients:
1 cup quinoa, cooked according to package directions (or leftover quinoa)
1 small onion, finely chopped (approx 1/2 cup)
1-3 small garlic cloves, finally chopped or pressed
1/4 cup bread crumbs
(almond flour makes an excellent lo carb or gluten free option)
1 jumbo eggs, lightly beaten
1/4 cup parmesan
1/2 tsp italian seasoning
1/2 tsp salt
pepper to liking
Cooking Instructions
Heat a large skillet over medium-high heat and 1-2 tablespoons olive oil, or a nonstick cooking spray to coat the pan. When hot, add onion and cook until soft. Add garlic, stir and cook for about 1-2 minutes.
Place the quinoa, cheese, and bread crumbs in a large bowl and stir to combine. It’s best to try to break down the quinoa a little bit. Combine the onions and garlic into the quinoa mixture add the eggs. Season with salt and pepper; stir well.
I like to use scoops to make uniform balls I can shape into a patty. If you don’t have a scoop you can use a cup to measure ⅓ to ½ cup of the mixture and shape it into a patty shape, pressing the mixture well. (Wet hands will make this easier.)
Heat the skillet back up over medium heat. Again coat the pan with oil. Once hot place the patties one at a time into the pan. DO leave plenty of room between patties.
Cook for about 5-7 minutes, carefully flipping with a spatula once, or until dark golden brown on each side. the mixture, cooking in small batches about 3-5 at a time.
What is the difference between quinoa varieties?
These freeze well. I cook them, then place them on a baking sheet that has been lightly sprayed with nonstick cooking spray. Freeze until firm, then transfer to a freezer-proof container. Reheat in the oven or toaster oven to get back the crispy exterior.

Can I make this vegan?
Yes ! the jumbo egg helps bind the quinoa to form patties HOWEVER, I have had success putting the quinoa and breadcrumbs ( or almond flour) in my mini food chopper. A few pulses break down and combine the ingredients and they stick together better. So yes, VEGANS you can just leave out the cheese and egg and still enjoy. It is unnecessary to make substitutions. Pretty Flexible!
